Rant Away

Two things I like to do most...collect recipes/attempt to cook and rant about things I love or don't love...or just general musings on my day.

Today's rant (could possibly be an everyday rant) - Diet Coke. My complete and unabashed obsession with it and the need to cut back consumption...cut it way back. Today I had a business lunch. It was @ a restaurant where anytime your glass is half empty (not the metaphor, but really half empty...like you drank half of it :), they would refill. Because I drink my Diet Coke the second it arrives @ the table (its a rule), my glass was half empty before lunch was even served. I lost count, but I would guess the waitress refilled my glass 3 or 4 times in 45 minutes. Not good. By the end of lunch, not only did I have to pee like a racehorse (again not the metaphor...really did pee like a racehorse), I also had the shakes. I am guessing it was caused by the Diet Coke, but could also be attributed to Donut Friday as I had a cruller and a few donut hole chasers just a couple of hours before lunch. Lordy. I know it is bad...it is all bad...but lack of self control and the fact that I can justify anything means that bad choices are often made and that is why I am up @ 12:45 am writing a blog post instead of sleeping...Diet Coke still coursing through my veins.

Today's recipe is stolen off of Pinterest (the new crack). It is a fall-ish salad that sounds delicious and might have to be a summer-ish salad so I can try it. 



Autumn Chopped Salad
(Printable Recipe)

Ingredients
*6 to 8 cups chopped romaine lettuce
*2 medium pears, chopped
*1 cup dried cranberries
*1 cup chopped pecans
*8 slices thick-cut bacon, crisp-cooked and crumbled
*4 to 6 oz. feta cheese, crumbled
*Poppy seed Salad Dressing (I like T. Marzetti)
*Balsamic Vinaigrette (I like Newman's Own Light Balsamic Vinaigrette)

Instructions
*On a large platter, combine the lettuce, pears, cranberries, pecans, bacon and feta cheese. Drizzle generously with poppy seed dressing, followed by some of the balsamic vinaigrette. (I would estimate that I used about a cup of dressing: 70 percent poppy seed dressing and 30 percent balsamic vinaigrette) If you prefer your salad to have more dressing, feel free to experiment with the combination.
